COLD SPRING ROLLS (Suitable for patients on dialysis)
 
Ingredients Method
 
½ cup finely shredded cabbage Fry chicken mince in oil
½ cup grated carrot Finely slice raw vegetables
½ cup cooked chicken minceSoak noodles in hot water until tender then drain
(or shredded BBQ chicken breast) Gently mix noodles, vegetables and chicken
¼ cup fresh mint Individually dip dried rice paper sheets into bowl
2 tbsp finely chopped spring onions of warm water to soften
¼ tsp pepper Place sheet on a chopping board
1 cup softened vermicelli or Divide filling into 8 portions
clear Asian rice noodles Put one portion in corner of sheet
1 tbsp oil Fold closest corner over filling
8 sheets dried rice paper sheets Fold in the two side corners then roll
 
Serving Suggestion
 
Serve with a small amount of low salt soy sauce or sheet chilli sauce

GUNTHER'S GERMAN STYLE CUCUMBERS (Suitable for patients on dialysis)
 
Ingredients
 
4 cucumbers
1/3 cup white wine vinegar
1 1/2 tsp. sugar
1/3 cup water
1/4 tsp. tarragon
1 cup onions, chopped or sliced
 
Directions

Peel and slice cucumbers very thin. Let stand for 20 minutes. Drain and rinse with cold water. Drain again. Mix vinegar, sugar, water, and tarragon, and pour over cucumbers. Refrigerate at least one hour. Serve cold. Makes 6 servings
